      Spice Tips

      • When using rubs and shakes on larger portions of meat such as turkeys, roasts and hams, try rubbing the meat down the evening before cooking. Put the meat in a plastic bag, and refrigerate overnight. This sets the flavors more deeply into the meat.

      • BBQ Sauce should only be applied to meat during the last 15 minutes of cooking. Applying sauce too soon will cause it to burn and blacken the meat. Many times the best use for a sauce is on the side of your plate to "dip" the meat in.
